Osso Buco
Tender veal shanks braised with vegetables and white wine until fall-apart soft. A rich, elegant Italian-American classic.
Ingredients
- 4 shanks veal shanks (2-inch thick)
- 1/4 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 medium onion, diced
- 1 carrot, diced
- 2 ribs celery, diced
- 2 cloves garlic, minced
- 1 cup dry white wine
- 2 cups beef broth
- 1/2 cup tomato sauce
- 4 sprigs fresh thyme
- 1 bay leaf

Preheat oven to 325°F.

Coat 4 shanks veal shanks (2-inch thick) with 1/4 cup all-purpose flour, salt, and pepper.

Heat 2 tbsp olive oil in a large Dutch oven over medium-high heat. Brown veal shanks on all sides, about 3 minutes per side. Remove and set aside.

Reduce heat to medium. Add 1 medium diced onion, 1 diced carrot, 2 ribs diced celery, and 2 cloves minced garlic. Cook until softened, about 5 minutes.

Pour in 1 cup dry white wine and scrape up any browned bits. Simmer for 2 minutes.

Add 2 cups beef broth, 1/2 cup tomato sauce, 4 sprigs fresh thyme, and 1 bay leaf. Return veal shanks to pot.

Bring to a simmer, then cover and transfer to oven.

Braise for 1.5 to 2 hours until veal shanks are very tender and meat pulls easily from the bone. Internal temperature should reach 190°F.

Remove from oven. Discard thyme and bay leaf. Serve with braising liquid spooned over top.
