Sisig
Sizzling chopped pork dish with calamansi, soy sauce, and chili peppers, served on a hot plate for authentic presentation.
Ingredients
- 2 lbs pork jowl or shoulder, finely chopped, chopped fine
- 1/2 lb pork liver, finely chopped, chopped fine
- 1/2 cup yellow onion, minced
- 4 cloves garlic, minced
- 1 green chili peppers, minced
- 4 tbsp soy sauce
- 4 tbsp calamansi or lime juice
- 4 tbsp mayonnaise (optional)
- 4 tbsp vegetable oil
- to taste salt and black pepper
- 1 raw egg

Cook 2 lbs chopped fine pork jowl or shoulder, finely chopped and 1/2 lb chopped fine pork liver, finely chopped separately in boiling water for 20 minutes until cooked through. Drain and let cool slightly.

Heat 4 tbsp vegetable oil in a large skillet or sizzling plate over medium-high heat. Cook 1/2 cup minced yellow onion and 4 cloves minced garlic until softened, about 2 minutes.

Add cooked pork jowl and pork liver to the skillet and cook until browned and slightly crisped, about 10 minutes.

Stir in 4 tbsp soy sauce, 4 tbsp calamansi or lime juice, 1 minced green chili peppers, and 4 tbsp mayonnaise (optional). Toss to combine.

Push the mixture to the side of the skillet and crack 1 raw egg into the center. Let it cook for 1-2 minutes, then mix into the pork.

Season with to taste salt and black pepper to taste.

Serve immediately on a hot sizzling plate, if desired.
